LTB Philippines Chefs Association President’s Report List of Events and Activities October 2022 to September 2023
Total Membership as of September 15: 135 Professional Members: 82 Affiliate Members: 13 Corporate Members: 7 Academe Members: 2 Chapter: 1 Unpaid Members: 30 LTB Scholars 2023: 15 Total LTB Scholars 2005-2023: 224 (1) October 18, 2022- International Chefs Day Members and guests gathered at Ember by Josh Boutwood in Makati's Greenbelt 3 for the LTB Philippines Chefs Association's Annual International Chefs Day celebration. Chef Josh Boutwood's family-style multicourse menu impressed guests, highlighting the diverse flavors of each dish. Lee Kum Kee introduced their newest product, the Lee Kum Kee Liquid Seasoning. We also announced our CSR project with Anya Resorts Tagaytay for the Kalipay NEGRENSE Foundation, aiming to make the community self-sufficient by funding an in-house bakery for disadvantaged children. The event raised Php45,600 in donations and concluded with gifts from Lee Kum Kee and raffle prizes from Anya Resort Tagaytay. Thank you to all those who attended and donated. Jose Leonardo Gamboa Jr. Francisco Santiago Luis Ramon Senn Robert Spakowski Jerome Valencia (3) December 8, 2022- Annual Christmas Party W hosted our Annual Christmas Party at Ikomai and Tochi in Makati, featuring a warm and festive atmosphere with a cocktail reception, hors d'oeuvres, and wine. The event, led by the LTB Board of Directors, Chefs J. Gamboa, James Antolin, Sito Senn, J.A. Ventura and I, also celebrated Team Philippines' representatives for the Coupe Du Monde De La Patisserie in France. We announced fundraising results for the Kalipay NEGRENSE Foundation, the resumption of the LTB Culinary Scholarship Program, and our pledge of P200,000 to support Team Philippines at the Coupe Du Monde De La Patisserie. The party concluded with gift exchanges and giveaways from Lee Kum Kee, leaving guests with full hearts and culinary memories. Mida Food Hightower PYC Food Corporation La Bodega La Tasca Catering Philippine Wine Merchants (4) January 20-21, 2023- Coupe Du Monde De La Patisserie in Lyon, France LTB Philippines Chefs Association supported Team Philippines for one of the biggest international pastry competitions in the world, the Coupe Du Monde De La Patisserie, held in Sirha Lyon, France last January 2023. Team Philippines was represented by Anthony Segubiense (SEH-GOO-BYEN-SEH), Vergel Iral, and Angelica Hong and accompanied by coaches, Chefs Buddy Trinidad, Jackie Ang-Po, and Heinz Pelayo. Team Philippines earned their spot at the Coupe Du Monde De La Patisserie when they competed at the Asia Pastry Cup in Singapore last October 2022. While they finished 14th out of 18 countries, their participation in such a global competition is a testament to their dedication and our commitment to nurturing culinary talent on the international stage. (5) April 19, 2023- 4th Louie Senn Golf Invitational It was a day filled with fun, camaraderie, and fierce competition as golf enthusiasts and culinary professionals gathered to play in the 4th Louie Senn Invitational Golf Tournament at the picturesque golf course of The Country Club in Sta. Rosa, Laguna. Congratulations to the tournament and raffle winners! Anya Resort Tagaytay Happy Living (6) June 5, 2023- Chefs Table at Brotzeit Members and friends gathered at Brotzeit Shangri-La BGC for an exceptional and fun-filled night with great food and beer. Brotzeit Corporate Chef Ivan Maminta and team delighted the guests with their impressive spread showcasing Brotzeit’s crowd pleasers best enjoyed with the perfect beer pairings. The lively conversations, infectious laughter, and buzzing atmosphere truly captured the spirit of camaraderie and celebration, making the event feel like Oktoberfest in June. The proceeds of this event is in support of the LTB Philippines Culinary Scholarship Program which resumes in July this year. Thank you to all attendees and our generous sponsors for making this event truly memorable: Hightower ESV International Corp Alaska (7) July 10, 2023 – LTBCSP 2023 Batch 15 Welcome Dinner at Ikomai and Tochi Desserts After a three-year hiatus, the LTBCSP resumed last July 10th with 15 scholars coming from all over the country. The scholars were welcomed by the LTB board of directors, Chef Brando Santos of Unilever, Chef Norbert Gandler and Chef Uli Willimann of ISCAHM over dinner and wine at Ikomai and Tochi Desserts, hosted by Chef James Antolin. (8) July 15, 2023- LTBCSP 2023 Batch 15 Educational Tour at Euro-Swiss Factory Batch 15 of the LTBCSP, accompanied by members of the board, visited the sausage factory of Euro-Swiss Food Inc. in Carmona, Laguna to see how European-style sausages and hams were produced and distributed to hotels and restaurants. Thank you to Euro-Swiss for the fun, informative tour and the delicious spread. (9) July 21, 2023- Culinary Demo and Graduation Lunch at Unilever Food Solutions Test Kitchen in BGC Our scholars were hosted by chefs Kenneth Cacho, Pipo Aluning, Brando Santos, and Paulo Sia at the Unilever Food Solutions Test Kitchen in BGC with a private demonstration and lunch. Congratulations to our Batch 15 of scholars and a special thanks to Chef Norber Gandler of ISCAHM and Unilever Food Solutions, for supporting our program. (10) July 31, 2023- Worldchefs Judging Seminar Congratulations to the 12 chefs who successfully completed the Worldchefs Judging Seminar last July 31, 2023, conducted by Chef Rudy Muller, Worldchefs Culinary Competition Committee Member. Selorio Ariel Manuel (11) July 31, 2023- Worldchefs Asian Presidents Forum Opening Ceremony The Worldchefs Asian Presidents Forum 2023 took place on July 31, 2023, at the Conrad Hotel Manila. The forum welcomed delegates from over 16 countries in the Asia Pacific region and esteemed guests of honor, including Worldchefs officers such as President Chef Thomas Gugler, Secretary General Chef Cornelia Volino, Chef Otto Weibel, Chairmen Chef Rick Stephen, and Chef Rudy Muller. Also in attendance were Chef Marco Bruschweiler and Chef Kenny Kong. The event commenced with an opening speech delivered by TPB Chief Operating Officer Marga Nograles and concluded with words of hope and inspiration, highlighted by a personal appearance from DOT Secretary Christina Frasco. The primary objective of the forum was to bring together chefs from across the continent to share insights into culinary heritage, industry best practices, and sustainability goals. Distinguished keynote speakers, food historian, and author Felice Prudente Sta. Maria, along with Chef Meik Brammer, led discussions on Filipino food heritage and sustainability within the hospitality sector. A panel discussion was expertly hosted by Chef Fernando Aracama from LTB Philippines and featured award-winning chefs Stephan Duhesme, Carlos Villaflor, and Jordy Navarra, renowned for their achievements in the Asia's 50 Best Restaurants list. We extend our sincere gratitude to the Tourism Promotions Board, PEPTarsus, Assistant VP Chef KK Yau, and Continental Director for Asia, Chef Willment Leong, for their vital contributions and co-organization of this historic event. (12) August 2, 2023- Community Outreach at Baseco Despite the challenging weather conditions caused by Typhoon Falcon, members of the LTB Philippines Chefs Association, along with student and faculty volunteers from De La Salle College of Saint Benilde and the Lyceum of the Philippines University Manila, united for a meaningful service event at a covered court in Baseco Port Area, Manila City. Joined by visiting chef delegates from Worldchefs Without Borders, the outreach effort successfully provided essential relief to over 400 families, offering food packs with rice and fresh vegetables sourced from Tanging Yaman Farmers, as well as delicious chicken adobo prepared by culinary students. The event was supported by Clara Ole, Lee Kum Kee, and Alaska, with the additional goal of promoting the livelihoods of co-op farmers associated with the Tanging Yaman Foundation through the purchase of their local produce, contributing to sustainability in the community. (15) Kalipay Foundation Bakery Project The Kalipay Foundation received a generous donation of Php100,000 from the LTB Philippines Chefs Association for their in-house bakery project, led by Chef Mikel Arriet and Chef Chris Leaning. As of August 2, 2023, they have secured baking equipment, submitted their baking room floor plan, and are now seeking industrial bakery suppliers in Bacolod. After the bakery is set up, LTB will organize a livelihood program with LTB chef volunteers teaching basic recipes to support their community.
