JEROME VALENCIA

Chef Jerome Valencia is from Makati City, Philippines. He graduated from University of Santo Tomas with a degree in Behavioral Science in 1994 and from Center of Culinary Arts Manila in 2000.
Chef Jerome opened his first restaurant, Macky’s Pares in 1996. He became a Junior Sous Chef for Citrio from 2000 to 2004, and then became a Sous Chef for Uva Restaurant in Greenbelt Makati from 2000 to 2006. Afterwards, he became the Sous Chef in Caversham House in Australia from 2006 to 2008. Chef Jerome became the Co-Owner of Canteen Simple Good Foods from 2009 to 2012, and was the Chef Instructor in Academy of International Culinary Arts from 2008 to 2011, before moving on to become the Chef Instructor in Instituto Culinario from 2011 to 2014.
In 2014, Chef Jerome opened and became a partner for Tambai Yakitori — a Pioneer hangout place in Poblacion, Makati. He became a Special Lecturer in Lyceum of the Philippines Manila - Culinary Institute from 2014 to 2017, before moving on to become the Executive Chef in St. Luke's Medical Center Quezon City from 2017 to 2020. Afterwards, his love for teaching remained strong and steadfast, which led him to go back to become the Culinary Lecturer in Lyceum of the Philippines Manila - Culinary Institute from 2020 up to today.
Chef Jerome has been the Chef Consultant of Z Hostel, Poblacion, Makati since 2020, and is the current President of LTB Philippines Chefs Association. Chef Jerome is also a WORLDCHEFS Continental Culinary Judge.
