Last April 24-26 LTB Philippines Chefs Association supported the Madrid Fusion Manila Gastronomic Conference where top chefs from Spain Singapore Hong Kong and the Philippines including LTB Philippines Chefs Fernando Aracama and J. Gamboa presented their latest discoveries and techniques in the culinary field.

April 22 - Welcome Dinner at Aracama Filipino Cuisine
Chef Fernando Aracama prepared a sumptuous Filipino dinner for the visiting chefs of MFM on April 23 at Aracama Filipino Cuisine. Present at the dinner were Spanish chefs: Elena Arzak Francisco Paniego and Mario Sandoval among others as well as officials of the Department of Tourism (DOT) and Madrid Fusion Manila (MFM).

April 23 – Malacanang Reception for MFM Chefs
April 24 – MFM presentation by LTB Vice President Fernando Aracama
Chef Fernando Aracama presented his topic Base Ingredients: Sour Fruits at the Madrid Fusion Manila Gastronomic Conference to a crowd of over 1000 chefs restaurateurs food and beverage professionals from the region. Chef Fernando detailed the use of native tomatoes mangoes batuan sampaloc guava and other sour fruits in Negrese cuisine and demonstrated KBL Kadios Baboy at Langka and the making of Pickled Green Mangoes.
April 25 - International Press Dinner at Cirkulo
Cirkulo Restaurant hosted over 40 members of the international press and officials of MFM and the DOT at Cirkulo for dinner. The guests were given a glimpse of Chef J. Gamboa's presentation the following day by way of the dishes served: Cabeza de Cerdo or Sisig made from suckling pigs and Cochinillo Asado or Spanish Style Roast Suckling Pig. The guests enjoyed the delicious wines hosted by Bodegas Ramon Bilbao from Rioja Alta Spain: Monte Blanco Verdejo Mar de Frades Albariño Ramon Bilbao Gran Reserva 2006 and Ramon Bilbao Mirto 2008 delighted the palette of the guests.
April 26 – MFM presentation by LTB President J. Gamboa
Chef J. Gamboa closed MFM with his topic: Nose to Tail Cooking in the Filipino-Spanish Menu wherein Chef Gamboa examines the full use of the pig and cow in Filipino and Spanish cuisine and notes their similarities. He also presented a video detailing the journey of the suckling pig from the hills of Marinduque to the abattoir in Pasay then to the kitchen of Cirkulo where it is prepared for the Cochinillo Asado or Spanish Style Roast Suckling Pig.
