Greetings from LTB Philippines Chefs Association!

LTB Members from all over the world joined us on Zoom last September 4, 2021 for the 8th Annual General Meeting. Thank very much you to all those who attended the meeting and participated in our e-elections. 

You will be happy to know that your 2020-2021 Board of Trustees accomplished 10 separate events and activities from October 2020-September 2021.  Please find full details in the LTB President’s Report 2021. 

Due to Covid-19, the elections for the LTB Philippines Board of Trustees were held in advance via e-ballots sent through the Viber Community and e-mail. The following were elected as members of the Board of Trustees 2021-2022:

The box consists of dinner rolls with butter, chicken arroz caldo with a variety of toppings and condiments, Australian beef cheeks salpicao, lumpiang ubod beggars pouch, Laguna cheese and mozzarella cannelloni with adobo flakes, and bibingka malagkit for dessert.

(1) October 20, 2020- International Chefs Day
Last October 20, Tuesday, LTB Philippines celebrated International Chefs Day with a virtual dinner via conference call platform, Zoom. LTB President Chef Sito Senn opened the event with a few words and welcomed our dear attendees and this month's guest chef, Chef Rob Pengson.
 
The Digital Dinner menu was specially prepared by Chef Rob Pengson, Executive Chef of Beso-Beso and President and Director of Aleanza Institute in Makati.
 
The delectable menu featured Chef Rob's flakey apple empanada with foie gras ganache, braised Canadian AAA short ribs with orzo in pumpkin puree, and sauteed haricot verts. Chef Rob's coconut macaroon with treacle crust, whipped coconut cream, and coconut flakes was a delightful ending to the sumptuous meal.

(2) November 2020- Typhoon Ulysses Outreach Initiative
On November 11, 2020, the powerful and deadly Category 4 Typhoon Ulysses struck the Philippines and caused the worst flooding in Metro Manila since 2009.
 
Heavy rains caused by the typhoon overflowed rivers, causing severe flooding in Marikina and Rizal, leaving about 12,000 residents stranded and homeless.
 
November 15, 2020-- LTB Member Chef Sonny Mariano donated 2000 pieces of pandesal to a community in Barangay Rosario in Rizal after it was tragically ravaged by Typhoon Ulysses. Accompanied by the LTB Director for Social Action, Chef J.A. Ventura, they met with some of the barangay officials to discuss the needs of the stranded families and evacuees.
 
November 23, 2020-- LTB Philippines Chefs Association, represented by Chef J.A. Ventura and Chef Jerome Valencia, traveled to Barangay Burgos in Rodriguez, Rizal, to distribute bags of rice to families affected by the recent typhoon.
 
LTB Philippines Chefs Association donated rice to 250 families from Barangay Burgos, Rodriguez, Rizal. LTB Philippines would like to thank Barangay Burgos, Lito Nolasco and team for their assistance.
 
(3) December 8, 2020- Annual Christmas Party
Last December 8, Tuesday, members of LTB Philippines came together via Zoom to celebrate Christmas. LTB President Chef Sito Senn kicked off the festivities by warmly welcoming our attendees and spread Christmas wishes on behalf of the Board of Directors. LTB Vice President, Chef Carlo Miguel thanked our generous sponsors and began the program by introducing this month's featured chef, Chef Cyrille Soenen.
 
Chef Cyrille shared a few words and guided the diners on how to best enjoy the menu he lovingly prepared with the convenience and precision of KLG International's innovative oven, the Rational SelfCooking Center.
 
The holiday Digital Dinner box included an aperitif, a Chase GB gin and tonic kit, courtesy of Wine Depot. This month's special menu featured Chef Cyrille's famous pâté en croûte with duck breast, pork, and Rougie foie gras served with pickled vegetables, homemade baguette, and butter. Chef Cyrille wowed the guests with his roasted porchetta stuffed with chorizo with a side of sauteed spinach and mushrooms, and Pommes dauphinoise. The delectable feast ended with CiÇou's original Kouign Amman with salted caramel sauce perfectly paired with Remy Martin Cognac. Kevin Charuel, Remy Martin Brand Advocate for the Philippines, gave a brief introduction and guided the guests through a tasting.

(4) February 23, 2021- 2nd Virtual Trivia Night
Members and friends from all over the world logged in on Zoom last Tuesday to join the fun and trivia games. The attendees enjoyed their delicious burgers and beers from Burger Beast by Chef Carlo Miguel and were treated to wonderful surprise raffle prizes and an exciting live music performance by Ms.Julia Serad.

(5) March 16, 2021- Bokashi Pinoy’s 30-Day Garbage to Garden Workshop
Last Tuesday, hundreds of attendees joined LTB Philippines and Bokashi Pinoy on Zoom for the free webinar: Bokashi Composting for Restaurants. Bokashi Pinoy's CEO and President, Ms. Lanie Francisco was joined by her team of mentors and Chef J Gamboa, the Executive Chef of the Milky Way group of restaurants and LTB Philippines' Director for Education, to share their expertise and experience with the Bokashi Garbage to Garden Program.
 
(6) April 2021- LTB and WWF’s Special Kawalikasan Series
Earth Hour is a global environmental movement of WWF, aimed to inspire and empower individuals, businesses, organizations, and governments to take tangible action for the planet. The goal is to increase awareness and spark conversations on protecting nature not only to combat the climate crisis but to ensure our own health and overall well-being.
 
WWF Philippines and LTB Philippines Chefs Association believe that building a better, healthier, and greener normal is essential in protecting the environment. Together, we can speak up to highlight the importance of nature and why urgent action must be taken to reverse nature loss.
For Earth Hour 2021, LTB Philippines Chefs Association in partnership with WWF-Philippines and WWF-Sustainable Consumption and Production presents a special Kawali-Kasan: A Sustainable Home Cooking series with LTB Philippines Chef Dan Puga, Chef Kit Carpio, Chef Margarita Marty, Chef Erica Aquino, Chef Sito Senn, Chef Laudico, and Chef Carlo Miguel.
 
(7) May 21, 2021- Sushi and Sake Night
Over 40 guests logged in on Zoom last Friday to join LTB's 7th Digital Dinner. Each premium bento box arrived at the guest's home chilled and beautifully wrapped in fabric containing a variety of imported seafood from Japan courtesy of Hightower. Tsukiji's premium sushi bento box also includes Tamago Yaki, Nimono vegetables, seasonal Japanese appetizers, and a packet of miso soup.
 
The guests also received bottles of sake from Philippine Wine Merchants. To complete the Japanese-themed dining experience, Hightower gifted the attendees with pouches of Japanese Genmaicha, a loose-leaf blend of green tea and roasted brown rice.
 
LTB President, Chef Sito Senn and Chef J Gamboa of Tsukiji started the event with a few words and welcomed Mr. Rey Co of Hightower to explain his featured products. The evening was also graced with the presence of Mr.Hiraoki Shibahara of Philippine Wine Merchants and Mr.Yuichiro Mase of Gekkeikan Brewery all the way from Japan to introduce their product, The Shot and the two of its many varieties, the Junmai and Daiginjo Sake.
 
As the guests enjoyed their dinner and sake, they were delighted and entertained by the comedic stylings of Japanese comedian, Yuki Horikoshi.
Everyone's weekend kicked off on a high note as the evening continued on with much cheers and laughter.

(8) June-July 2021- Hearing in Aid of Legislation- The creative industries bill sponsored by congressman De Vencia held hearings in aid of legislative in June & July for the inclusion of Philippine gastronomy as a protected industry. The study of the value chain is currently being done & they may need to tap our members for interviews.
 
The creative Industry is a priority bill in Congress 29, 2021. The meetings were attended by Chef Margarita Marty and Chef Jerome Valencia.
 
(9) June 29, 2021- Digital Dinner with Chef Ian Padilla
As Manila's restaurant scene slowly comes back to life, LTB Philippines Chefs Association continues to bring together friends and members from all over the Metro safely through LTB Philippines' monthly virtual chef table dinners. Over 40 guests attended last Tuesday's Digital Dinner by Paul Patisserie Corporate Chef, Chef Ian Padilla.
 
The exciting evening was kicked off with a short speech by LTB President, Chef Sito Senn. After Chef Sito's welcoming remarks, LTB Vice President, Chef Carlo Miguel introduced and thanked the event sponsors, Hightower Philippines and Alternatives Food Corp., for their unwavering generosity and support.
 
The spotlight was then put on Chef Ian Padilla as he introduced his latest endeavor, Meat Eater by Gastro Dada, and presented his elegantly curated menu for the evening. Chef Ian prepared a first course of pork rillettes, cornichons, homemade red onion jam, freshly baked bread, and fresh crisp greens with a light vinaigrette to start. For the main course, he served tender sous vide beef short rib with Bourguignon jus, roasted vegetables, and puree de pomme de Terre. The wonderful meal ended with a delectable, caramelized lemon tart with a buttery crust, and berries preserve.
 
As the guests dined, they were serenaded with sweet Bossa Nova music by Ms.Julia Serad and entertained with a fun French culinary trivia quiz and raffle draws courtesy of Chef Sito Senn.

(10) August 18, 2021- TESDA Food Production (Professional Cookery) NC II Validation Workshop- Chef Jerome Valencia, J.A. Ventura, and Erica Aquino attended the TESDA Validation workshop along with other industry experts to review the Training Regulations (TRs) for Cookery NC II last August 18 through Zoom.
