Greetings from LTB Philippines Chefs Association!

Thank you very much to our guests for attending the 9th Annual General Meeting last October 1, 2022, Saturday, at the Banquet Hall of Milky Way Cafe in A. Arnaiz Ave, Makati. 

You will be happy to know that your 2021-2022 Board of Trustees accomplished 11 separate events and activities from October 2021-September 2022.  Please read the full details in the LTB President’s Report 2022.

The guests enjoyed a grand spread of Hiyashi Chuka cold ramen salad, a variety of sushi, sashimi, and maki imported from Japan, assorted seafood and vegetable tempura, chicken teriyaki, Kurobata pork tonkatsu, and A5 Wagyu beef sukiyaki, They indulged in a sweet ending of fresh fruits, matcha Basque cheesecake, and an open bar of wine, beer, and sake.

(1) October 20, 2021- International Chefs Day
Last October 20, Wednesday, members and friends gathered for LTB Philippines Chefs Association's first "hybrid" Digital Dinner event to celebrate International Chefs Day 2021. The Board of Directors, along with the executives of PYC Foods Corp and One World Deli, wined and dined at Bistro Manuel while LTB members and guests joined them virtually through Zoom. LTB's new President, Chef Carlo Miguel, opened the event with a message of gratitude and hope for our industry and introduced our graceful host for the evening, Chef Ariel Manuel.
 
Chef Ariel welcomed the attendees and explained to the guests at home how to best enjoy his special menu. The four-course dinner included a duck quiche to start. The quiche made with duck breast, flaked duck leg, and seared foie gras, topped with caramelized onion, and immersed duck egg, was paired with fresh salad greens and a vacuum-cooked watermelon salad. For the second course, Chef Ariel served mackerel, shrimp, and octopus gently poached in a light kaffir and lemon-infused oil, accompanied with a crisp slice of homemade bread topped with a luxurious saffron crab fat flan. The main course was a plated masterpiece of tender braised Wagyu neck and roast knuckle topped with chilled hollandaise and was served with risotto saltimbocca, seared mushrooms, and asparagus. The grand meal finished with an elegant dessert of poached white chocolate brûlée and pistachio roll, garnished with fresh raspberries, berry coulis, and basil water. 
 
Chef Carlo ended the evening with an exciting raffle draw for the Zoom attendees. Congratulations to Nelson Co for winning an overnight stay with breakfast for two at Anya Resort Tagaytay!

(2) December 8, 2021- Annual Christmas Party
Last December 8, Wednesday, members and friends gathered online for LTB Philippines Chefs Association's Annual Christmas Party.
 
LTB President Chef Carlo Miguel cheerily welcomed the attendees of the last Digital Dinner event of the year. Chef Carlo kicked off the party with an optimistic speech for the new year ahead, thanked our ever-generous sponsors and wished everyone warm Christmas wishes on behalf of the Board of Directors.
 
Unilever Food Solutions Philippines Executive Chef, Chef Kenneth Cacho, also shared a few words on behalf of the UFSPh team and talked about the festive "Flexitarian" menu they prepared with UFS's newest brand, The Vegetarian Butcher. He then passed the mic to The Vegetarian Butcher's Chains and Marketing, Ms.Sarina Morales, to formally introduce TVB's exciting plant-based product line to the members. TVB is expected to be launched to the market in the first quarter of 2022.
 
In the Christmas dinner kits, members received a lavish 6-course spread that included a chili & beans "No Beef" stew with granny smith-jalapeno jam and herb lavash, chicken "No Chicken" pie with morels, peas, pickled vegetables, mesclun, and cider dressing, pumpkin soup & spiced yogurt with glazed "No Turkey" - sage sausage in a sourdough bread bowl, post-oak-smoked U.S. beef brisket & U.S. short plate beef candies with potato-yeast buns, coleslaw, and cheese corns. For dessert, a peanut butter & banana trifle with candied pecans, marshmallows, apricot and vanilla cream, and a trio of strawberry and dark chocolate, maple and bacon, and peanut butter and jelly alfajores. The members were encouraged to creatively plate their Christmas dinners as part of one of the event's contests organized by the UFS Culinary Team.
 
As promised, many prizes were won at the party! Several attendees donated more prizes on the spot for the e-raffle! Thank you very much to everyone who joined the contests and games! Thank you also to our raffle prize donors: Gilbert Lee, Nelson Co, Jackie Po, Rommel Hinlo, Quito Jose, James Antolin, Margarita Marty, and J Gamboa for making the evening more fun!

(3) March 12, 2022- Chefs Table At Anya
After two years of virtual dinners, LTB Philippines Chefs Association finally held its first face-to-face event since February 2020. Over forty attendees traveled to Anya Resort Tagaytay in Silang, Cavite to join the Chefs Table at Samira by Chef Chele Gonzalez.
 
Members and guests were greeted at the door by our Board of Directors and host, LTB member and Resort General Manager, Mikel Arriet. While Chef Chele and his team prepared for service, the guests excitedly mingled and enjoyed the free-flowing refreshments and breathtaking views on the veranda. Guests were served passed hors d'oeuvres of buñuelos de bacalao, chorizo pintxos, and tanigue ceviche mixed tableside.
 
Before lunch commenced, LTB President, Chef Carlo Miguel, and the members of the LTB Board of Directors formally welcomed everyone and shared words of gratitude to the attendees, hosts, and sponsors.
A large pan of paella with jamon and chopitos was wheeled into the dining room on a trolley. Chef Chele and his doting staff served the paella with a small dollop of aioli. While the guests were enjoying their paellas, Chef Chele brought in a massive slab of Iberico pork ribs that was masterfully slow roasted on the grill. The sliced ribs were served with a lightly dressed salad, a side of roasted marble potatoes and red peppers.
 
As dessert was being served, Chef Chele announced his new partnership with the resort and will be operating Samira Restaurant beginning March 25, 2022. This special menu can now be enjoyed at Samira by Chele Gonzalez at Anya Resort Tagaytay.

(4) July 1, 2022- Chefs Meet Up with Umani hosted by Worth The Health Foods and Nipa Brew
LTB Chefs meet up with WTH Foods and Nipa Brew team at Nipa Brew Tap Room and Brewery to sample their latest plant-based product line, Umani. Umani offers versatile frozen and ready-to-eat meat alternatives made with local ingredients like soy and jackfruit.
 
LTB Philippines Chefs Association would like to express deep gratitude to WTH Foods and Nipa Brew for their warm hospitality.
  
(5) May 30-June 2, 2022- World Chefs Congress
LTB Board of Directors were joined by members in Abu Dhabi for the much-awaited biennial event for F&B industry leaders and culinary innovators, the Worldchefs Congress 2022.
 
The congress featured seminars that tackled pre- and post-pandemic issues and trends in the industry such as the rise of plant-based cooking, hygiene and sanitation for hospitality and restaurants, online culinary schools, and the loss of industry workers due to the pandemic.
 
Culinary Ambassadors of Goodwill and Taste the Philippines also presented at the congress. Ambassador Quintana and Filipino Chef, Chef John Buenaventura promoted Filipino cuisine for diplomacy in the UAE with a demonstration using indigenous Filipino ingredients.   
 
(6) August 2, 2022- PCC 2022 Judges Briefing and Welcome Cocktails sponsored by The Tourism Promotions Board at Sheraton Manila
Local and international judges assembled at the COLLAB in Sheraton Manila for their pre-competition briefing. Welcome cocktails prepared by Chef Francisco Santiago were served after.

(7) August 3, 2022- PCC 2022 Judges Welcome Dinner hosted by Cirkulo
Thank you to all the judges and sponsors who attended the delightful dinner by Chef J Gamboa at Cirkulo.
 
(8) August 4, 2022- Flavours of Canada at Conrad Manila
In celebration of 155 years of Canadian Confederation, the Embassy of Canada hosted a sumptuous dinner inspired by Canada’s indigenous culinary culture featuring the best of Canada’s food and beverages. The dinner was prepared by Conrad Manila’s Executive Chef, Chef Warren Brown.

(9) August 3-6, 2022- Philippine Culinary Cup

(10) August 6, 2022- Philippines wins bid to host Worldchefs Asia Presidents Forum 2023
During the awarding ceremony of the Philippine Culinary Cup 2022, Chef Willment Leong announced that the Philippines won the bid to host the Worldchefs Asian Presidents Forum to be held in August 2023.
Through the efforts of LTB Philippines Chefs Association in collaboration with the Philippine Tourism Board, the Worldchefs Asian Presidents Forum will bring together delegates from different Asia Pacific chefs associations to present the latest gastronomical trends, share knowledge on sustainability practices, culinary education, as well as promote the diverse local culture and cuisine of the Philippines.
 
(11) August 18, 2022- PCC 2022 Thanksgiving Cocktails hosted by Hilton Manila
To close another successful year of competition, camaraderie, friendship and over-all talent, competitors, judges, and sponsors were treated to a thanksgiving celebration hosted by PCC 2022’s Over-all Champion, Hilton Manila.
