7th Annual General Meeting

Dear Chefs and Members,

Greetings from LTB Philippines Chefs Association!

Thank you to all those who attended our 7th Annual General Meeting last October 13, 2020, held virtually through Zoom, especially those who joined us from different parts of the country and different timezones. 

We are happy to announce that the 2019-2020 Board of Trustees accomplished ten separate events and activities from September 2019 to October 2020 despite the year's challenging circumstances. Please find full details in the LTB President's Report 2020. 
As per our by-laws, elections for the LTB Philippines Board of Trustees were held.

After the Board adjourned the meeting, attendees in Metro Manila enjoyed their special dinner bento together in the comfort of their homes. 

Special thank you to Chef James Antolin and the team of Ikomai and Tochi for the delicious feast of ribeye steak with Kikuni sauce, pan-seared albacore tuna, Chahan, stir-fried vegetables, California roll, and assorted cookies. And a big thank you to Hightower for sponsoring the dinner. 

Attendees received a limited-edition LTB face mask with their dinner. Conversations flowed all night, and everybody had a great time.

  1. September 29, 2019, LTB-Worldchefs Without Borders Outreach at Sapang Bato Porac, Pampanga - Volunteer members of the LTB Philippines Chefs Association (LTB) together with volunteers from the Philippine Young Chef’s Club (PYCC) organized a feeding mission at the Aetas community in Sapang Bato, Porac, Pampanga

 
The feeding mission was in support of the Philippine Coast Guard Medical Support Squadron who provided medical services to the Aetas.
 
The group was able to feed over 600 children and their families. In addition to this initiative, they also supplied 100 papaya and 1280 red hot chili seedlings, courtesy of Jeff Rodriguez of East West Seeds, to start a sustainability program for the community.
 
Special thanks also go to the Academy of Culinary Arts for lending their cooking facilities and the LTB members who participated were: Chefs Jac Laudico, Pauline Lagdameo, Mark Celzo, Julie Ann Mendoza, Sonny Mariano and Michelle Adrillana.
 
The mission was spearheaded by Chefs JA Ventura of LTB and Cherrie Tan of PYCC as part of World Chefs Without Borders, the global humanitarian aid initiative of the World Association of Chefs Societies (WORLDCHEFS).
 

  1. October 7-9, 2019- Davao Culinary CupLTB President Sito Senn, along with Chef James Antolin and members from LTB Philippines Chefs Association Manila, traveled to Davao to judge at the region’s biggest and most prestigious food competition, The Davao Culinary Cup 2019.

 
The three-day event was held at The Annex Events Center, SM City Davao. The theme for 2019 was “Who’s Cooking: Chef & Apprentices Culinary Competition,” signifying that professional chefs and apprentices alike compete with each other at the same time. Over two hundred fifty participants from different schools and professional establishments all over the region joined the events to showcase their culinary artistry and creativity.
 
On the evening of their arrival, LTB Davao President, Chef Salome San Jose, honored the guest chefs with a grand welcoming event with LTB Philippines Davao Chapter members. The dinner party was hosted at Salome’s Garden.
 
A farewell dinner was hosted for the chefs by Chef Anton Abad and Chef Dale Yulo Sy at Olive Bistro before the chefs returned to Manila.
 

  1. October 17, 2019- International Chefs Day 2019 with Nestlé and the Students of Sta. Niño Elementary School, Caloocan- It was a fulfilling day as members of LTB Philippines Chefs Association and Philippine Young Chefs Club, together with Nestle Professional visited the students of Sto. Niño Elementary School. The 10-year-olds learned healthy recipes and were taught HOW HEALTHY FOOD WORKS, 2019’s Worldchefs International Chef’s Day theme.

 
Among those who joined the activity were LTB Philippines Chefs Sito Senn, Fernando Aracama, JA Ventura, Rommel Hinlo, Ron Davis, and J. Gamboa. From the Philippine Young Chefs Club were Cherrie Tan, Charls Estoque, Jill Junsay, Lhynn Acibar, Patrick Ramos, Vince Caro, Vincent Resayaga, and Yasa Mognie. Nestlé Professional Philippines were represented by Chef Ajie Acorda Mendoza, Keith Rodriguez, and Leslie Go Alcantara.
 

  1. October 19, 2019– International Chefs Day Celebration at Foo’d by Davide Oldani - The four-hands dinner prepared by Venetian guest chef Federico Michielleto and chef Carlo Miguel of Foo'd was outstanding and made even more special as it was for the benefit of the LTB Culinary Scholarship Program 2020.

  1. November 12-14, 2019- FHC China International Young Chefs Challenge – Delegates from the Philippine Young Chefs Club, City of Dreams Chefs Rier Maverick Franco, Jomari Miranda, Rayzel Monique Salvador, Michael Angelo Monsalve, along with their team manager, President of PYCC, Chef Cherrie Uy-Tan represented the country in the FHC China International Young Chefs Challenge held at the Shanghai New International Expo Centre in Shanghai, China.

 
With the guidance of City of Dreams Manila’s executive chefs Audi Budiman and Markus Tauwald, executive pastry chef Hoon Sung and LTB Coaches, Chefs Sito Senn, J Gamboa, James Antolin, Brando Santos, the team was tasked to prepare a themed buffet for 12 persons. The team’s Christmas-themed buffet earned them the silver award, which was judged according to a set of criteria including taste, presentation, professional preparation and mis en place.
 
The team competed against Australia, China, Hong Kong, Malaysia, Penang-Malaysia, Singapore, South Africa, South Korea, Taiwan, Vietnam and the United States.
 

  1. December 2, 2019 – Swiss Christmas at Chesa Bianca- We shared a wonderful Swiss Christmas spread of appetizers, cheeses, salads, carvings and desserts prepared by Chefs Leo, Ambi & Erwin of Chesa Bianca paired with champagne and wines.


Nacionale Bladeworks CEO, Ryan David, gave away a small gift to all the dinner guests. To cap off the night, the chefs exchanged gifts and went home with much holiday cheer.

  1.  January 29, 2020- February 22, 2020 Kidapawan Soup KitchenLTB member and chef proprietor of Boyd’s Pizza House in Kidapawan, Chef Ritche Mearns, has taken the initiative of establishing a weekly operational soup kitchen to help feed the evacuees in various evacuation centers after a series of earthquakes hit Cotabato last October 2019.

 
With the assistance from LTB Philippines Chefs Association, Chef Ritche has provided wholesome meals to over 2,500 evacuees.

  1.  July 7, 2020- LTB Online Game Night - Members from everywhere logged in on Zoom last Tuesday to join the fun and trivia games. The chefs were brought back to culinary school with basic culinary and cuisine questions. There were, of course, some curveball trivia questions too!

  1. August 25, 2020- Digital Dinner: Virtual Chef’s Table- We held our first-ever virtual chef's table on Zoom. Special guests from The Canadian Trade Commissioner Service, Ms. Angel Cachuela, Ms.Louise Pasadilla, Ms.Fe Asuncion, and bloggers, Spanky Enriquez, Richie Zamora, Emman Damian, Angelo Comsti, and Cy Ynarez joined us for this unique chef’s table experience.

 
The Digital Dinner menu was specially prepared by Chef Carlo Miguel, Vice President of LTB Philippines and Culinary Director of BitesToGo, Inc. The "quarantine-inspired" menu featured Chef Carlo's freshly baked sourdough bread with Kerrygold™ herb garlic butter, and a beetroot-cured salmon with ginger shallot dressing, and goat cheese for starters. Chef Carlo made a tender braised Canadian beef cheek served with Canadian varieties of potatoes from our local farmers that have been cooked three ways for the main course and a Basque burnt cheesecake with macerated strawberries cooked in balsamic vinegar and pepper for dessert.
