LTB Philippines Culinary Team 2010 at the Bocuse d’Or Asia Finals

As a first time participant at the Bocuse d'Or Asia Finals in Shanghai, the LTB Philippines Culinary Team placed 6th just after Singapore by mere points, besting veteran participating countries: South Korea, Thailand, India, Cambodia, and Vietnam. Lolodad's Chef Patron Ariel Manuel and 20 year-old Apprentice TJ Abello deftly prepared Sterling Halibut with King Crab, accompanied by Foie Gras en Croute and Asparagus and Caviar Custard in perfect time (3 hour time limit) for 13 international judges including the current Bocuse d'Or World Champion, Gier Skeie of Norway.

The dish was presented on a custom designed platter made by Filipino metal artist Mike Aguas. Coaching the team was French Chef Cyrille Soenen of Restaurant Cicou, joined by Chefs Othmar Frei of Santis/Werdenberg as Jury Member for the Philippines, Fernando Aracama of Encore/Canteen/MyThai Kitchen and J. Gamboa of Cirkulo and Milkyway Restaurants. It was an exceptionally impressive first outing for LTB Team Philippines. Chef Ariel & TJ prepared, cooked and plated their entry on time as planned and practiced in a deliberate and professional manner.

The top 4: Malaysia, China, Japan and Indonesia gain the right to compete against the top 24 teams of the world at the Bocuse d’Or World Finals in Lyon, France on January 2011.
