Knife Polishing Workshop Recap
Last April 1, 2025, culinary professionals gathered at the Mabini Room in the Milky Way Cafe Building for an immersive experience with one of Japan's most respected knife makers. Led by Mr. Toshikazu Aoki, COO of Sakai Takayuki, alongside Mr. Leon Taira, Sakai Takayuki Representative, the Sakai Takayuki Knife Polishing Workshop brought together craftsmanship, tradition, and hands-on learning in an afternoon that proved both educational and engaging.
Sakai Takayuki and Aoki Knives Manufacturing Co., Ltd. has been crafting premium Japanese knives since 1947, making it one of the oldest knife manufacturers in Japan. Based in Sakai City, the company began by producing samurai swords before transitioning to kitchen knives as Japan modernized. Today, the company continues its 600-year tradition of combining time-honored techniques with modern technology, creating blades renowned for their exceptional sharpness, balance, and durability.
The workshop began with a demonstration by Mr. Toshikazu where he showcased the traditional Japanese knife polishing method using the TOISHI polishing stone that has #800/#6000 grit.
Following the demonstration, participants, under Mr. Toshikazu's guidance, practiced the techniques on their own knives and their own polishing stones.
Between polishing sessions, attendees enjoyed a selection of snacks, including various sandwiches, Spaghetti Bolognese, Fries, and Katsu-style Chicken Lollipops, all thanks to Milky Way Cafe.
In a special segment of the event, LTB Philippines President Chef Jerome Valencia, and Treasurer Chef J Gamboa, presented certificates of appreciation to Mr. Toshikazu and Mr. Leon for their dedication and generosity in conducting this workshop.
