LTB Philippines Chefs Association at the Worldchefs Congress & Expo 2018: REDUCE WASTE

Dear Members and Friends,


We are happy to report that the LTB Philippines Chefs Association delegation to the Worldchefs Congress & Expo 2018 in Kuala Lumpur Malaysia had a successful and fulfilling conference.  Our delegates headed by President Chef James Antolin and the board of directors, Chefs Sito Senn, Fernando Aracama, J. Gamboa, Jerome Valencia along with members Chefs Rommel Hinlo, Margarita Marty, Dale Vance Yulo, Mia Yan, Paulo Domingo, Joel Pascual and Cherrie Uy-Tan shared and learned from some of the best chefs, experts and personalities and discovered future trends in food cultures from our Worldchefs colleagues.  We are eager to share all of these experiences with our members and young chefs for the development of the professional Filipino chef!


One of the key learnings from the conference was the WORLDCHEFS initiative to REDUCE WASTE.  

  • At least 30% of all the food produced in the world goes into the garbage as waste.
  • There is enough food produced in the world to feed everyone.  There should be no hunger in the world.
  • Chefs must actively manage supplies to reduce waste and avoid food being thrown out.
  • Kitchens should actively segregate and monitor their waste into: Food Waste, Plastic Waste and Recyclables
  • At the PCC 2018, all competitors are required to bring their own small, clear plastic bins and segregate as follows:


BIN 1:

Food Waste:

Fruit and Vegetable Peelings, Food Scraps, Meat and Fish Bones, etc.


BIN 2:

Plastic Waste:

Dry Plastic Bags, Plastic Bottles, Cups, Styro, etc.


BIN 3:


Metal Cans, Glass Bottles, Aluminum Foil


  • Culinary schools must include Food Waste Management courses in their curriculum.
  • Partnerships must be made with local supermarkets to "rescue" or pick up food that is not saleable (ripe fruit, almost expired ingredients) for these to be converted to food for the hungry. (What is Foodbank?)

The Worldchefs Congress & Expo s a bi-annual global event where chefs from more than 100 countries come together as a united chef community.  Last 11-14 July 2018, Worldchefs once again brought the world of chefs together in the vibrant, dynamic city of Kuala Lumpur, Malaysia. LTB Philippines Chefs Association will join the celebration and will participate in the gastronomic journey that will inspire plates, minds and culinary souls.
